Still containing sugar, this canister is about four inches tall and is part of Matthias Schlinker's cooking set, found in his Civil War-era haversack. During the war, the Union boycotted Southern sugar and began importing more sugar from the Kingdom of Hawai'i. Hawaii'an sugar exports increased 175% per year between 1860 and 1866. With this increase in imports from Hawai'i, the price of sugar in the United States grew from seven to 17 cents a pound.
